In large soup pot, melt butter over medium-low heat. Add leeks and cook until tender but not browned stirring frequently about 20 minutes. Add potatoes and chicken stock. Bring to a boil. Reduce heat and simmer until tender.
Purée in food processor in batches. Return to soup pot. Add seasoning and cream. Simmer 10 minutes. Do not allow soup to boil.
