Place all the ingredients into a bowl except for the salmon, season to taste and mix well. Before service add the salmon and toss gently with ingredients. Serve with homemade tortilla crisps or your favourite nachos.

Chef Insider Tip: Perfectly Diced Salmon
The side of salmon isn’t always the same size, thicker closer to the head and thinner as you move to the fin. To give more even and consistent results, use a butterfly technique first when using salmon from the thicker end before cutting into the cubes. It isn’t necessary to butterfly the meat near the fin, simply cube.
