In a food processor combine BBQ sauce, ginger, pineapple, and soy sauce. Blend until smooth. Hold refrigerated for service.
Service
Set oven to 400°F (200°C). For each serving, spread 1 pizza crust with 1/2 cup (125 ml) BBQ sauce, leaving 1/2" (1-cm) border along edge.
Cover with 1 cup (113 grams) mozzarella cheese, 4 ounces (113 grams) chicken, 3/4 cup (175 ml) onions, 1/2 cup (125 ml) pineapples, and 2 tablespoons (30 ml) peanuts.
Bake until cheese is melted and crust is crisp. Cut as desired and garnish with 1 tablespoon (15 ml) cilantro. Serve hot.
