Smokehouse Bourbon Sweet Potato Mash

Creamy mashed sweet potatoes with a smoky BBQ twist and French’s® Crispy Onions topping.

Ingredients

Serves 4
8 cups (2 liters) Water
4 tsps (20 milliliters) Cattlemens ® Smokehouse Rub
2 pounds (900 grams) Sweet Potato, peeled, 1/2-inch (1-cm) dice (4 medium potatoes)
2 tbsps (30 milliliters) Buttermilk
1 tbsp (15 milliliters) Unsalted Butter
4 tsps (20 milliliters) Cattlemens ® Smokehouse Rub
4 tsps (20 milliliters) Grated Parmesan Cheese
1/4 cup (60 milliliters) Cattlemens ® Kentucky Bourbon™ BBQ Sauce
1/4 cup (60 milliliters) Frenchs ® Fried Onion Crunchy Toppers

Combine water and 4 teaspoons (20 ml) of the Cattlemen’s Smokehouse Rub. Bring to simmer in steamer pot. Place sweet potatoes in steamer basket, cover with lid.
Steam potatoes 20 minutes or until tender.
Transfer potatoes to bowl; mash with potato masher or ricer. Add buttermilk, butter and remaining 4 teaspoons (20 ml) Cattlemen’s Smokehouse Rub. Whisk until butter is completely melted.

Place sweet potato mash in ramequins or individual serving dishes.
Drizzle with Cattlemen’s Bourbon BBQ Sauce. Sprinkle with Parmesan cheese and French’s Crispy Onions.
