4 pounds Atlantic salmon, cut into 24 x 80 g portions
6 tbsps
5 tbsps Vegetable oil, divided
1 cup each, Brunoise diced red onions, green pepper and fennel
2 cups Diced mango
1 1/2 tbsps Rice wine vinegar
2 tsps Mirin
2 tbsps each, Chopped cilantro and sliced green onions
Procedure
1. Marinate salmon with 4 tbsp (60 mL) seasoning and 4 tbsp (60 mL) oil for 1 hour.
2. Place diced vegetables into large bowl. Add mango and remaining seasoning. Add rice vinegar, remaining oil and Mirin. Mix well.
3. Fold in chopped cilantro and green onions. Chill for 1 hour before service.
4. Grill salmon on medium-high heat until cooked and garnish with relish
