Place ingredients in a saucepan and warm oil to about 200°F (95°C). Remove from heat and let steep for 1 hour. Strain garlic using a kitchen sieve or cheesecloth. Store as you would normally store oils. Use as desired.
For Fish Preparation
Combine lemon juice, Caribbean jerk seasoning, curry powder, 2 tablespoons (30 ml) oil, and ground ginger in mixing bowl. Blend until uniform. Place rockfish in glass baking dish and cover evenly with marinade. Allow to marinate 1 hour.
Bake in 400°F (200°C) oven for 15 minutes, until internal temperature reaches 145°F (62°C). Heat 1 tablespoon (15 ml) oil in pan. Sauté onions and bell peppers over high heat for approximately 1 minute. Add pineapple, lemon pepper seasoning, and remaining oil. Sauté 1 minute more.
