Combine all the ingredients for the pickling liquid, bring to boil, simmer for 10 minutes. Keep hot.
Peel, clean and process all the vegetables.
Boil jar, lids and ring in water for 5 minutes.
Place vegetables in the Mason jar, top with hot pickling liquid leaving 1-inch space below the rim.
Place lid and ring on each jar.
Boil jar in water for 20 minutes, remove from water and cool at room temperature
Rest jar for 2 days before using
