Chipotle Cinnamon Crusted Atlantic Salmon

Serves 4
6 each Atlantic salmon filet skinless 5 oz (150 gr)
1 tbsps
6 tbsps Panko crumbs
Pesto | Serves 4
1 cup Fresh basil
1 tbsps Fresh garlic
1 tbsps Lemon juice
1 cup Light olive oil
5 tbsps
1/4 cup Parmesan cheese
1/4 cup Toasted almonds
1/4 cup Hemp heart (Raw Shelled Hemp Seed)
Procedure
1. Place the basil leaves and toasted almonds into the bowl of a food processor and pulse.
2. Add the garlic and Parmesan cheese and pulse several times.
3. Add remaining ingredients with the exception of the light olive oil.
4. While the food processor is running, slowly add the olive oil in a steady small stream.
5. Reserve pesto and refrigerate until required.
6. Season the 6 portions of salmon with 1 Tbsp (15 ml) Club House Chipotle Cinnamon Seasoning.
7. Generously brush salmon with pesto, sprinkle each piece of salmon with 1 Tbsp (15 ml) of panko crumbs.
8. Bake in pre-heated oven set at 400F for 10 to 12 minutes.
