Aji Amarillo Green Curry Cashews

1. Preheat oven to 275°F (135°C). Mix curry paste and olive oil in bowl. Whisk egg whites in separate bowl until frothy. Stir in curry paste mixture and 1/4 cup (60 ml) Aji Amarillo Seasoning.
2. Toss egg white mixture and cashews in medium bowl until nuts are well coated. Transfer to parchment-lined baking sheet.
3. Roast 15 minutes or until cashews are toasted, rotating pan halfway through cooking. Remove from oven and sprinkle with remaining Aji Amarillo Seasoning, tossing to coat.
4. Let cashews cool to room temperature before storing.
