Cowboy Double Smoked Bacon Redeye Beans

Tender kidney beans simmered in Bourbon BBQ Sauce, served extra-smoky with double smoked ham, red onion, and tomato.

Prep

1. Preheat oven to 400°F (200°C). 
2. Melt butter; sauté onions and ham on medium-low heat for 10 minutes.
3. Add kidney beans, Cattlemen’s Cowboy Rub, diced tomato and sauté for another 2 to 3 minutes.
4. Mix in Cattlemen’s Bourbon BBQ Sauce, sauté for 1 minute.
5. Add vegetable stock, bring to a simmer, cover and place in oven for 90 minutes.
6. Remove from oven, reduce sauce if necessary. Keep warm for service.

Service

1. Ladle beans into crock or bowl, garnish with chopped parsley.
